Explore the rich meat sauces, homemade pastas and centuries-old traditions of artisan products in a new light as you dine on a six-course menu featuring cuisine from Parma, Bologna, Alba, Milan and Mantova. Dishes include prociutto e pinzin, an 18-month-old prosciutto di Parma with pinzin dumplings; gnocchi di ortiche, a stinging-nettle gnocchi with brown butter and sage; and arrostino di vitello e asparagi, roasted veal loin with asparagus parmigiano and trebbiano sauce. Each course is also available with a wine pairing perfectly matched to the meal’s rich and robust Italian flavors.
