Why We Cook, What We Cook: African American Foodways

Recognized around the country for its diversity, inventiveness and delicious tastes, African American cuisine nourishes the soul. But what do we know of the history of African American cooking? Why we cook, what we cook? Noted independent scholar Howard Paige will provide answers in his discussion of the history of African American foodways. Mr. Paige has conducted research on African American food traditions for more than twenty years and lectured at museums and conferences around the United States. His book, African American Cookery, is in its 3 rd edition.
Enjoy a sampling of foods prepared by noted local chef Gregory Calvert. As the head chef for Greater Grace Temple and Conference center, Chef Cal is known for mouth-watering Soul Food at its best.
