Cooking over a wood-burning fire has been a focal point of our kitchen since Poggio opened six years ago.
Each spring we celebrate the Spiedo, or spit, with an entire menu devoted to rustic dishes cooked over live fire. Influenced by traditional springtime feasts in Italy revolving around whole roasted baby goat or pig and small skewered game, we will be spit-roasting coniglio/rabbit, maialino/young pig, capretto/goat, and faraona/game hens. Traditional side dishes of polenta and fagioli all’uccelletto/white beans cooked with garlic and sage complement the meats.
