Refermentation, the art of fermenting beers in the bottle, cask or keg rather than in a large fermenter, is a technically challenging and rapidly fading art. However, because the fermentation continues up until the time of consumption, the reward is an unusually complex flavor and freshness.
For National Geographic Live!’s “The Art of Refermentation” event, Oliver has assembled a unique lineup of beers, including a few that even serious beer fans may never have had or even seen before.

Oliver has been crafting award-winning beers as brewmaster at New York’s Brooklyn Brewery since 1993. Most recently his Brooklyn Lager was selected the best from a lineup of 32 beers at a blind tasting conducted by a panel of experts for The Washington Post. An expert on pairing beer with cuisine, Oliver is the author of “The Brewmaster’s Table: Discovering the Pleasures of Real Beer with Real Food.”
