Spain has a long history of producing fine wines, some of which are finally becoming available. Home to hundreds of grape varietals, Spain, according to archeological evidence, has been producing wine since about 4,000 BC. Wine has played an important role in Spanish cuisine and culture since the Romans. Spain is the third largest producer of wine in the word after France and Italy, with the largest area of land dedicated to viticulture of any country in the world. Good Spanish wines are an impressive value.
There's really no such thing as "typical" Spanish cooking – beyond the ubiquitous paella! Food in Spain is as varied as its climate, cultures and geography. Most regional dishes are based on quality local ingredients and a relatively simple preparation.
