Many would argue that Cabernet Sauvignon is the "king" of grapes. It is without a doubt the most successful and popular of the "noble" varietals. It is the primary grape of the top vineyards in Bordeaux's Medoc and Graves districts, as well as the basis for most of California's superb red wines. Cabernet Sauvignon ages well, needing 5 to 10 years in order to achieve peak flavor. It is often blended with other varieties to make wines with increased complexity.
Since the infamous "Paris Wine Tasting" of 1976, California has been a well-respected producer of Cabernet Sauvignon. Some of the wines are great, and some are plonk, but California Cabs consistently rank highly with experts and not-experts alike.
