Join Raghavan as he shares some of his favorite dishes from the book: Baingan Nu Bharto served with Papads Smoky eggplant pate roasted with red chiles, garlic, and rock salt and served with flame-toasted lentil wafers; Aloo Chaas (Chunky potatoes simmered in a buttermilk-cilantro sauce); Wild Salmon with Scallions and Tomatoes Wild salmon pan-seared with turmeric and poached in a malt-vinegar-coconut milk-red chiles-cinnamon paste; Buttery basmati rice with spinach Aromatic basmati rice perfumed with clarified butter, cumin, red onions, and spinach; Green Beans with a red onion sauce Tender green beans steeped in a red onion-roasted mustard seed sauce with fenugreek; and Pineapple with golden raisins served with premium vanilla ice cream Tart pineapple stewed in blackened red chiles, golden raisins, and jaggery and served atop premium vanilla bean ice cream.
