About Valdivieso Winery
Valdivieso is one of the longest established names in Chilean winemaking, with the first release of Valdivieso wines being in 1887. In recent years international sales of Chilean wines have begun to take off, and Valdivieso has exploited this new market with a wide range of varietal and single vineyard reserve wines from their Lontué and Maipo vineyards. Valdivieso has also introduced a premium non-vintage wine called Caballo Loco, meaning ‘Crazy Horse.’ Jorge Coderch, is the winemaker behind Caballo Loco and has essentially introduced a solera system, similar to that used in the production of sherry, to produce a sequence of non-vintage premium wines designated by numbers.
About David's on Jefferson Hill
David Oland, chef and proprietor of David’s on Jefferson Hill will be preparing a 5 course dinner paired with many of Valdivieso’s Single Vineyard selections, their Extra Sparkling Brut and of course, the Caballo Loco #9. For those of you not familiar with David’s he is located on Jefferson Avenue downtown Naperville in the coach house of the Historic Jefferson Hill Mansion. David is an awarding winning chef with 22 years of experience. David’s features a European influenced menu, combining modern interpretations of French, Spanish and Italian cuisine. The restaurants recent accolades include Chicago Magazines “Hot List” of the Ten Hottest Restaurants to dine in 2008.
