Mother's Day Brunch at a Lakeside Getaway May 13, 2012

Lakeway Resort and Spa will host a beautiful Mother’s Day Brunch and weekend stay for Mom’s special day this year. Treat mom to a night’s stay with rates starting at $209 for Saturday, May 12 and pamper her with a luxurious treatment at our San Saba Spa.

Mother’s Day Brunch will be held in the picturesque glass-enclosed Vistas Ballroom overlooking the lake and will feature delicious selections prepared by Chef Jeff Axline. There will also be a petting zoo along with live entertainment throughout the day, providing fun for families of all ages.

The brunch will feature cold choices including heirloom tomato caprese salad with Texas artisan mozzarella, organic basil and Texas olive oil; smoked Pacific Northwest salmon served with crispy baguette, capers and tomatoes; tropical fruit; poached shrimp cocktail with horseradish and remoulade; fresh artisan greens and baby spinach salad; and a cheese board with imported and domestic cheese, dried fruits and baguettes among other choices.

The brunch’s hot and savory options will include Porcini mushroom ravioli tossed with truffle cream, crispy shitakes and thyme; grilled Pacific salmon with Texas peach salsa and mint; carved to order roasted pork loin with apricots and sage; and potato gnocchi served with rock shrimp, lobster butter and fine herbs. There will also be a breakfast buffet complete with an omelet and egg station; chicken apple sausage; and banana and chocolate chip pancakes.

Assorted sweets will include strawberry shortcake, sticky orange and almond cakes, and raspberry and white chocolate bread pudding.
