Mark Schatzker, weekly columnist for Canada’s Globe and Mail and a frequent contributor to Condé Nast Traveler, presents his first book, Steak. It may be one of the most popular sources of protein in the Western world, but Schatzker tries to determine the science behind steak’s flavor. To this end, he ate 100 pounds of it and visited four continents as he traced humankind’s gustatory love affair with bovines and their prehistoric ancestors. Aspiring chefs will walk away with expert tips on finding the ultimate steak – just in time for grilling season.
