As we begin our new adventures in food & wine appreciation together. I would appreciate you forwarding this menu to your friends. Chefs love to cook and friends love to eat. We'd love to not only wine and dine you, but we'd love to wine and dine your friends to.

We will also start better portion control, as most past event attendees have expressed we serve to much food. A good thing, but I would rather the evening have a feeling of complete food & wine nirvana, and not guiltiness you can't consume the portions we've served in the past.

We are going to also make a concerted effort to make the perfect pairings for each course. So if you choose to use our wine suggestions on one of the courses please pick one of the numbers and mark your wine label with the number. This will help me organize wines into course wine groups faster at the start of each event.

You may also tip concluding each meal. With this we will start a Slow Food Fund. In other words tips will be used to purchase one of the world's finest food selections to treat the beggining of each event with something special to toast the evening!

This week it will be a surprise as I will supply the first round.

Sincerely,
Gary Irvin

P.S. Keep in mind the charity you would like to support. We will add your selection to a raffle and draw a charitable organization to donate a portion of the evenings dinner proceeds to. The object of the dinner is not to try and save the day for a charity, but to give what we can by having a fun evening together.
