To help bring Italy’s traditional, fish-centric Christmas Eve stateside, The James Beard Foundation has enlisted the talents of one of Philadelphia’s premier seafood chefs, Mike Stollenwerk - Owner of Fish and Little Fish. For this festive dinner, Feast of the Seven Fishes, on Wednesday, December 7th, Stollenwerk has crafted a menu that marries tradition with refined know-how and a respect for his ingredients.
A sampling of the dishes include: Baked Littleneck Clams with Oregano and Breadcrumbs; Crab Sausage with Peppers and Cavatelli; Salt Roasted Swordfish with Porcinis and Roasted Cipollini Gremolata; Carolina Shrimp with Butterscotch Beans, Cardoons, and Cabbage Mostarda; Limoncello Baba with Fennel, Pistachio and Black Olives.
