Pickling is the ancient culinary craft of preserving foods in salt brine or vinegar. Over millennia, cultures across the globe have tinkered with pickling recipes to make dishes spanning the gamut of tastes. Lucy Norris, an oral historian, ethnographer, and author of 'Pickled: Preserving a World of Tastes and Traditions' joins local pickle maker Bob McClure of McClure's Pickles to explain what makes a pickle a pickle, why pickles are found in so many cultures, and what other foods take well to pickling.
