Meet Nicasios’ third generation owner and cheese maker, Rick Lafranchi at New Frontiers’ free cheese tasting, Tuesday, April 12 from 5:30pm – 7:30pm. Sample some of the freshest, Swiss-style artisan cheese available in Arizona.
You will taste four of the best washed rind cheeses in America including: Formagella, offering a velvety consistency with a rich mouth feel, the mildest of Nicasio’s aged cheeses, Halleck Creek, a soft-ripening cheese produced in 8-inch wheels, aging for 3-4 weeks, at its’ smooth and creamy best at room temperature, Loma Alta, aged 3-6 weeks in 8-inch rounds, it is buttery, yet firm, with nutty undertones, Nicasio Reserve, a classic Swiss Italian mountain cheese, possessing exceptional depth of flavor in
12-inch rounds, held in Nicasio’s ripening rooms for at least three months
and Nicasio Square which offers the richest flavor of Nicasio cheeses,
reminiscent of a taleggio, aged for at least 30 days before ready for market.
