Explore how the artistic presentations that are seen in many of today’s fine dining establishments are created. In class we will prepare entrée courses and appetizer courses and create and discuss how they can be artfully presented. Just in time to impress your family for your holiday dinner!
New Years Eve Cocktail Party – Fancy Hors d’Ouevres with Chef Randy Torres
10:00am-2:30pm - $150 per person
Impress your guests with very tasty and amazingly beautiful treats at your holiday cocktail parties. Learn basic techniques in matching flavors, creating balance in a menu and kitchen skills all while creating some fantastic edible pieces of art. You will learn secrets of passed hors d’ouevres and trendy buffet presentations for many appetizers made from meats, poultries, seafood’s and vegetables. Chef Randy is a full-time instructor at PCI as well as the Department Chair of our Culinary Arts program. He has taught at other culinary schools as well as competed in many culinary competitions, and taken gold in many events around the world, including at the 2008 World Culinary Olympics.
Holiday Desserts – FOR KIDS with Chef Michelle Encarnacion
10:00am-3:00pm - $100 per person
Your child will have the opportunity to make Swedish cookie-crusted profiteroles and chocolate dipped éclairs. They will learn caramel popcorn, fudge and other heavenly delights to package and give away as gifts. They will finish the class by decorating their own gingerbread house that would be sure to steal the spotlight at the holiday spread. They will leave feeling a huge sense of accomplishment and be comfortable in any kitchen, all with an emphasis on proper safety and sanitation. Chef Michelle Encarnacion is a professional teacher who also graduated from PCI’s professional Baking and Pastry Arts program. Bringing her two passions together makes her a great instructor for these and other types of classes. We will also provide a healthy lunch for the kids of fresh sandwiches, vegetables and fruit.
