Chef Louisa Neumann discovered on a recent trip to Mendoza (her honeymoon!) that beef is serious business in Argentina. The famous gauchos or cowboys in this South American country herd their cattle across the vast open spaces of the Pampas region. They grill huge amounts of meat over open flames, using the rustic "asado" method. Their small and crispy meat handpies called empanadas are almost always cooked in large outdoor clay ovens. We'll move our cooking inside for this hearty and satisfying night in Argentina. She'll cap the evening off with a dulce de leche drizzled dessert and wash it all down with bold red Malbec wine.
