Chef's Studio Series
The Chef's Studio Series is presented by Lisa's Dining Club (www.lisasdining.com) and Four Willows Catering (www.fourwillowscatering.com). The concept of the Chef's Studio Series is to provide a forum for notable cooks and chefs to showcase their knowledge and experience in an intimate and interactive atmosphere. The Chef's Studio Series will be an enjoyable and interactive experience for both cooks and participants. It is a great avenue to cultivate the exchange of ideas, information and culinary secrets. The Chef's Studio Series is about interacting and learning to cook with a professional chef on the last Tuesday of every month starting in July 2008.

Appetizer:
Seared scallops with citrus reduction on organic spring greens
(sauteed leeks, orange, bolini, creme fresh, lumpfish eggs)
Entree:
Beef tenderloin in smoked bacon and parsley potatoes with green
peppercorn demi - glaze
(roasted petit pan squash, braised red cabbage)
Dessert:
Baked lemon pudding with papaya sauce and fresh berries
Dean McClernon has had the pleasure of working in kitchens across
Canada in the US and Mexico. He has had his own restaurant,
Heritage Park on the River and has been running Four Willows Catering
for 8 years. He has had the pleasure of cooking for David Carradine, Natalie
McMasters and Michael. He has also been the personal chef for Antonio
Banderas and Melanie Griffith.
Dean is a frequent guest on City Cooks and has appeared on the Shopping Bags.
He has teamed up with the Surreal Gourmet, Bob Blumer, on stage at the Eat
Vancouver Food Show.
Dean's first passion is cooking and enjoys nothing more than simple,
fresh quality food cooked to perfection, a good glass of wine and great friends.

Lisa & Dean,
I could not have enjoyed a meal or an evening more. I was rather apprehensive about making the journey into Vancouver from Tsawwassen, but, that menu was just too tempting. I am so glad that I did. From the moment I walked in, I was treated with the utmost grace & courtesy. Even amidst the myriad of last-minute details to attend, I was immediately offered a glass of wine, & never once did I feel my early arrival was intrusive. I cannot stop telling everyone about the absolutely charming group of co-diners I met. To be surrounded by these enthusiastic, knowledgeable & young people was such a delight.
You exceeded all expectations with the professional preparation & creative presentation of each course. You even added in 2 extra treats.
The ambiance, and shared energy was something just not to be missed. I enjoyed the bonus of the very animated mini wine seminar, &, of course the actual wine wine offered by Domaine de Chaberton. I believe you have a winning concept here, &, I cannot wait to return for the next evening in your series.
