This nationally-recognized, award winning chef and charcuterie expert is the visionary behind Birmingham's Forest Grill and Milford's Cinco Lago restaurants. he is also the author of two books, "Craft of Salting, Smoking and Curing" and "Salumi: The Craft of Italian Dry Curing."
