Sustainable seafood is on the menu Jan. 26 as the New England Aquarium launches its popular 2010 Celebrate Seafood Dinner Series with Brendon Bashford, the Executive Chef at Fairmont Battery Wharf and Sensing restaurant.
“Fish populations around the world are declining due to many factors including pollution, fishing, and climate change,” said Aquarium Director of Conservation Lydia Bergen. “Not only are fish an important part of a healthy diet, they are vital to the world’s ecosystem-health. At the Aquarium, we are educating consumers and working with the seafood industry to support sustainable options today so that we can have healthy, productive oceans into the future.”
Initiated in 2008, the Aquarium’s Celebrate Seafood Dinner Series, held in the Harbor View Café, features a three-course sustainable seafood meal with wine pairings and cooking demonstrations in a fun, conversational format. Bashford will join Aquarium Chef Tim Ridge to lead cooking demonstrations while Bergen will highlight each dish’s sustainability features.
On Jan. 26, the menu will feature wild Pacific cod, US farmed shrimp, and US farmed barramundi. Whether wild-caught or farmed, sustainable seafood comes from sources that do not harm the environment through overfishing, bycatch, or wasteful aquaculture practices.
