Looking for an Advanced Baking Series? Chef Eric designed this program to fill a void – many of his students want even more knowledge about Advanced Baking and Desserts. So, Chef Eric created a series for those who want more advanced information packed into four weeks. This course combines hands-on practical knowledge. Due to the amount of information taught each day, it is essential that students attend every class. There are NO MAKEUPS in this Series. Pastries and Breakfast Cakes - In order to produce these delightful pastries, patience is required as many doughs need a lot of attention and time to prepare. In this class we make Berliners – Breakfast Buns with Cherry Filling, Crème Fraiche Coffee Cake with Streusel Topping, Croissant Dough Almond Logs, Glazed Cinnamon Buns, Lemon Turnovers with Cream Cheese Dough; all to tempt you over Coffee and Tea. Elegant Party Cakes - In this class, students prepare intricate cakes for groups that are decorated professionally. Hazelnut and Chocolate Mousse Cake, Lemon Chiffon Cake, Chocolate and Frangelico Mousse Cake, Buche De Noel, Caramel Almond Sponge Cake, Chocolate Decadence with Raspberry Sauce, Harlequin Cake (Chocolate Sponge Cake with White Chocolate Mousse Filling). Advanced Cake Decorating - In our very popular Advanced Cake Decorating class, students learn important techniques to give your impressive cakes a perfect final touch – Bakery-Style. In this class we utilize Chocolate Décor, create Marzipan Décor, and experiment with Filling your Cakes. We also explore Advanced Frosting techniques to give you cakes worthy of accolades from your clients or friends and family. Restaurant-Style Plated Desserts – Wrapping up our series, students make complex Individual Desserts with Sauces and Garniture to maximize their eye appeal for Restaurant consumption. We make Espresso Profiteroles, Chocolate Raspberry Squares, Updated Tiramisu, Babes and elegant Chocolate Coffee Towers for incredible looking desserts that taste great.
